Like wine olive oil varies from year to year but unlike wine olive oil cannot be made any better by blending or bio-chemical fancywork.

Extra Virgin Olive Oil after all is only the oil extracted from the fruit of the noble olive tree, the quality being determined by the cultivation practices and extraction method.

The de-leaved and washed olives are transported via an elevator to our Granite Stone Mill. The olives are then fed on-to a Granite base on which two large and very heavy (1 ton each) Granite wheels slowly rotate and crush the whole olives into a course paste..

This relatively slow stone milling process, we believe, is an essential step in the production of our distinctive  varietal extra virgin olive oils. The paste produced by our Stone Mill is relatively course leading to what we believe to be a more balanced and true to the variety flavours of our extra virgin olive oils.

The resultant Stone Milled paste is then fed into a Malaxor - this is a tank like piece of machinery - in which the paste is slowly rotated for up to 45 minutes so as to assist in the separation of the oil from the other main constituents of the paste, mainly water and solids.

The final step in extracting our olive oil  is to feed the malaxed paste into our Horizontal separator,  were a large proportion but not all of the olive oil  is extracted , in a single cold process.The remaining paste is then pumped away for composting, to be re-used as a natural fertilizer

Kiewa Estate does not filter its olive oil, preferring to use the centuries old method of allowing the naturally cloudy olive oil to settle gently into a clear soft fruity finish, rich in both colour and flavour.

We are proud of our Varietal Extra Virgin Olive Oils, they are the fruits of our labour,and as close as nature intended the final product to be - both beneficial to good health and exceptional in flavour and taste.
